Christmas Salad

One of my favorite salads comes from the Junior League’s cookbook, Simply Classic. They call it “Christmas Salad,” but I think it would be appropriate for just about any time of the year. This is what we’ll be bringing to the party tonight.

For the salad:

mixture of spinach and lettuces
sliced red onion
pomegranate seeds or dried cranberries

For the dressing:

4 tbsp cranberry juice concentrate
4 tbsp rice wine vinegar
1 1/2 tsp Dijon mustard
1/2 tsp ground pepper
1/2 cup canola or vegetable oil (we usually only use about half of this)
